White Lightning Blend

Great taste, superior performance and affordable ingredients make White Lighting Blend a go-to for a wide range of savory baked goods. Excellent for pan bread, baguettes and boules, it's readily adaptable for use in enriched loaves and buns, pizza, and other flatbreads.

Equipment needed: Measuring cups and spoons or kitchen scale. Large zip-lock bag or stand mixer with paddle attachment.

Ingredients

1/2 Cup (76 grams) potato starch
7 Tablespoons (52 grams) tapioca strch
3/8 cup (86 grams) rice flour (see note, below)
3 Tablespoons (44 grams) oat flour
1 Tablespoon (22 grams) coarse buckwheat flour
1 Tablespoon (22 grams) steel cut oats
1 teaspoon (8 grams) xanthan gum
3/8 teaspoon (8 grams) salt

Notes

Brown rice flour:

Any whole-grain rice flour may be used, including hand-ground flour (which is my personal preference). Different types and colors of flour (eg: short-grain brown vs. red) will result in different colored products as well as different flavors.

To hand-grind flour from rice kernels, use a cranked burr grinder at medium-fine setting or an electric coffee or spice grinder. If the latter, place rice in the grinder, run for about 15 seconds, then shake the grinder to re-distribute the contents. Repeat 3 - 4 times.

Buckwheat flour:

Ready-ground buckwheat flour may be used, but hand-ground flour provides better flavor and performance. Follow instructions above to hand-grind buckwheat groats into flour or coarse meal.

Procedure:

Place all ingredients in a large zip-lock plastic bag, or in the bowl of a stand mixer fitted with the paddle blade.

If using a zip-lock, seal tightly, then toss, shake, roll and swirl the bag about 2 minutes, or until flour is thoroughly blended. Allow flour to settle before opening bag.

If using a stand mixer, use low speed for 1 minute, then raise speed to medium for 2 more minutes, until ingredients are thoroughly blended.
